Erica Corbett Cakes


Erica Corbett was inspired to start baking brownies after a visit to her Auntie Pamela in 2006. The brownies her aunt baked were so delicious because they had double the amount of chocolate that the original recipe called for.

Erica tinkered with the recipe until she was happy with the results and had worked out how to bake what is, in her opinion, the perfect brownie. Of course, it still contains double the amount of chocolate!

Sadly, her aunt died in 2019 but she thinks of her, every single time she bakes brownies.

Erica has a husband and three children, who don’t like the fact that she now bakes more for other people than for them.
